Harvested in early autumn from organically-managed native Irish honeybees foraging on wild ivy blossoms, this rare honey is produced in small batches in County Donegal. Ivy honey has a thick, set texture and a rich, slightly herbal flavour with subtle hints of caramel.
Naturally high in glucose, it sets quickly after extraction and is valued for its firm consistency and dense nutritional profile. Ivy honey is unpasteurised and minimally filtered, preserving its natural pollen, enzymes, and plant compounds.
Early research suggests that ivy honey may have antioxidant and immunomodulatory properties.
