This bold, aromatic honey is harvested in late summer from organically-managed native Irish honeybees foraging on wild ling heather in the hills of County Donegal. Left raw, unpasteurised and unblended, it retains its thick texture, amber colour, and distinctive herbal flavour. It’s gelatinous rather than runny, with a jelly-like consistency and a rich, lingering taste.
Heather honey naturally contains higher levels of antioxidants (that help prevent cellular damage in the body) and plant compounds compared to many other honeys. A collaborative study by Trinity College Dublin and Dublin City University revealed that Irish heather honey possesses antioxidant properties comparable to, and in some cases exceeding, those of New Zealand's renowned manuka honey.
